Ingredients
2x Cauliflower
1/4 cup Skimmed milk
3x Garlic cloves (crushed)
A thumb of parmigiano reggiano
Scallions or chives
Grating of nutmeg
Knob of grassfed butter
Salt & black pepper to season
Cooking Instructions
Remove the leaves and large stalks from the cauliflower and break into smaller florets. Pop the cauliflower into a large pan and add 1 tall glass of cold water. Crush the garlic cloves into the water, cover the pan with a lid, bring the water to boil and allow the cauliflower to simmer for 10-15mins.
Drain the water from the pan, add the milk and mash so that the mixture is lump-free. Grate a thumb (or handful depending on how cheesy you want it to be) of parmigiano reggiano into the mash and season with salt and black pepper. Stir well and add into a serving dish.
Cut a handful of spring onions/chives and sprinkle on top of the FAUXtatoes. Make a little well at the top of the FAUXtatoes and add a lump of grassfed butter and allow it to begin to melt. Finally, grate a small amount of nutmeg over all of the mash and then enjoy!
