Ingredients
2 Chicken breasts
2 tbsp Clear honey
2 tbsp Gluten free soy sauce
2 Garlic cloves, crushed
2 Red Chillies, finely chopped
1 tbsp Olive oil
4-5 Baby Gem or Iceberg lettuce leaves
1/2 Red onion, finely sliced
20g Cashew nuts, chopped
1 tbsp Sesame seeds
Cooking Instructions
Mix the honey, gluten free soy sauce, garlic and chillies in a bowl. Slice the chicken fillets into strips, pour the honey mixture over the chicken and allow to marinate for a few minutes.
Heat a frying pan on medium heat and add the tablespoon of olive oil. Add the chicken and remaining marinade to the pan and cook through for 6-7mins until the marinade starts to caramelize and darken. Take the pan off the heat and allow the chicken to slightly cool.
Pack each lettuce leaf with sliced onions, chopped cashews, chicken strips and sprinkle sesame seeds over the top of the chicken. Wrap up the leaf and tuck in.
