Ingredients
1 Courgette (Zucchini)
Buffalo Mozzarella
5 tbsp Green pesto
Olive Oil Spray
Salt
Black pepper
Cooking Instructions
Cut the courgette into thin strips and spray with a light extra virgin olive oil spray. Place onto a griddle pan and fry until the griddle begins to brown the courgette.
Take a small handful of mozzarella, place at the edge of a courgette strip and roll up, so that the mozzarella is tightly in the middle of a courgette roll.
Season with salt and pepper and add a dollop of pesto to the top of each roll. Preheat the oven to 180C and bake for 5-7minutes until the mozzarella begins to melt slightly.
Remove from oven and serve.
Serves 3-4 people.
