Ingredients
to make 20 wings
10 chicken wings, halved at joint
5 tbspn Habanero hot sauce (I use RisingHy)
4 tbspn Pure honey
1 tbspn tamari (gluten free soy sauce)
1 tspn garlic powder
Juice of ½ a lime
Sea Salt
For the Blue Cheese Dip
75g Crème Fraice
25g Mayonnaise
40g Blue Cheese (use a soft cheese like Danish Blue)
½ tbsp White wine vinegar
½ tsp Worcestershire sauce (gluten free)
Serve with lime quarters, a bunch of coriander/cilantro and a few sticks of celery.
Cooking Instructions
Begin by halving the chicken wings at the joint with a boning knife (or sharp knife if you don’t have one) – you will feel a flat edge at the joint and if you cut here, it will make it easier. Place the chicken wings into a large bowl and set aside.
For the marinade, mix all ingredients in a bowl and stir well. The marinade should have the consistency of a very runny honey. Pour the marinade over the chicken wings in the large bowl and stir a bit with a spoon to ensure that all the wings are coated. For the tastiest chicken wings, I would recommend marinating the wings, covering and leaving in the fridge for 24hours before cooking.
When you are ready to cook the chicken wings, take them out of the fridge and set aside for half an hour before cooking. Preheat the oven to 220°C (425F). Cover a baking tray with foil and place a wire rack on top of it.
After half an hour, place all of the chicken wings onto the wire rack, ensuring that the wings have enough space and none are touching. If you like extra spicy wings, you can add another dash of habanero hot sauce to each wing to give a nice kick! Reduce the oven temperature to 200°C (400F) and place the tray into the oven for 15mins. After 15mins, remove from the oven and use tongs to turn each chicken wing over. Place back into the oven for a further 10-15mins.
Once the 10-15mins is up, remove the wings from the oven. The chicken wings should be a lovely sticky brown colour. If they aren’t, pop them back in for another 5mins.
Pop in a serving dish with your celery, coriander (cilantro) and dip (optional), grab a load of napkins and dive in!
If you would like to serve the wings with the blue cheese dip, simply crumble the cheese into a bowl, add the rest of the ingredients and stir well.
