Ingredients (serves 4)
500g lean beef mince
400g chopped tomatoes (normally 2 tins)
350g black beans, drained
400g kidney beans, drained
1 onion, diced
1 red, yellow or orange pepper, diced
4 garlic cloves, crushed
1 tsp olive oil
2 heaped tsp chilli powder
1 tbsp ground cumin
1 tbsp smoked paprika
1 beef stock cube
2 tbsp tomato puree
A glug (few tbsp) red wine
1 square (12-13g) dark chocolate (>80% cocoa)
Pinch of salt to season
Cooking Instructions
Place a large saucepan on a medium-high heat. Add the oil, onion and garlic and fry for 5 minutes (until the onion begins to become transparent). Add the beef mince, diced pepper and chilli powder and fry until the beef begins to turn brown. Sprinkle in the smoked paprika, cumin and fry for another few minutes.
Pour in the chopped tomatoes, the tomato puree and stir. Crumble the stock cube into the mixture and stir again. Reduce the heat to low and pour in a little splash of wine (normally a few tablespoons is fine), a dash of salt and stir. Add the black beans and kidney beans and simmer for a further 5mins. Place the chocolate into the chilli and allow to slowly melt. Stir through and serve.
