Ingredients
250g Gluten free flour
5 very ripe bananas, mashed (4 for batter, 1 to top the bread)
70g granulated sugar
70g butter
2 eggs
2 tbsp milk
1/2 tsp vanilla extract
1 tsp baking powder
1/4 tsp salt
70g dark chocolate chips
Cooking Method
Preheat oven to 180C and lightly grease a loaf tin with butter. Put aside until your bread batter is ready.
In a large bowl, combine the flour, baking powder and salt.
In a separate bowl, beat together the butter and sugar until well combined. Add in the eggs, milk, vanilla extract and mashed bananas and mix until well blended.
Stir the banana mix and chocolate chips into the flour mixture. Pour the batter into loaf tin.
Bake in preheated oven for 50 minutes (until a skewer can be inserted into the centre of the loaf and comes out clean).
Let bread cool in tin for at least 10mins, then turn out onto a cooling rack.
Slice and serve warm with lashings of butter!
