Ingredients
800g Baby new potatoes
4 spring onions, chopped up
1 tbsp Olive oil
1 tbsp Balsamic glaze
2 tbsp Mayo
Maldon sea salt & black pepper to season
Cooking instructions
Cut the potatoes into half and place into a pot of boiling water for 15-20mins until cooked, then drain.
Place the potatoes into a large bowl and drizzle over the olive oil and balsamic glaze. Stir until all of the potatoes are covered and then add the mayo and half of the diced spring onions. Mix well.
Finally, season with sea salt and black pepper and sprinkle the remaining spring onion over the top to serve.
